Sashimi at YUKIMI is not served on ice. Prolonged exposure to low temperatures can dry out the fish, harden the texture, and diminish its natural sweetness. Instead, sashimi is maintained at an optimal low temperature and served within 30 minutes of preparation, ensuring peak freshness and taste.
The founder of YUKIMI has lived in Japan for many years, gaining extensive experience in the food and beverage industry, and previously worked at an Omakase restaurant in Saigon.
